The final ingredients of frozen yoghurt are added at this step. These are flavour, colour and sweeteners. They are mixed together in a flavour vat, then that mixture is pumped into the freezer with the rest of the mixture. While the mixture is hardening, it is made distressed so that there is excess volume and so that there is more air. In about three minutes the batch of frozen yoghurt starts to freeze and in a few more minutes there is about 50% more volume.
