While he made the horse. He messed up, and made the zebra, hippopotamous, etc...That is how they came to be.
He had three brothers. After Cronos was gone, the three chose for what they would rule. The youngest, Zeaus, chooose first. But, Poseidon got what he first wanted, the sea.
Poseidon, god of the sea
he thought the sea was the best place to rule. The best place for adventures, and secrets. He built a huge underwater palace, and made creatures and had a wife, Amphrodite. He liked to scare nymphs with monsters, so, he made the octopus, squid, jellyfish, sword fish, blowfish, and others. Once, he made the dolphin as a gift to please his wife. And he fell in love with Demeter, and begged her to love him. For her he made the horse.
Demeter was a moon goddess. In mythology, there's a connection between horse, moon, and sea, The she horse has a sea name, mare. The moon swings the tides, the waves have white manes, the dripping horses' stamp; moon shaped crescents.
Above, he made many creatures. That is a giant squid attacking.
Many people describe him with his staff. And it's how he made things.

I choose to do my project on Poseiden, because I love the water and I also found Poseiden to be a very interesting god, and especially the ending with the relations between horse, sea, and moon. It's also interesting how he made all those creatures, expecially the ones that he 'messed up' on.
