The colour gray is usually associated with either sadness, or an area in between where things are even. In The Great Gatsy, the events are set in the 1920's, a time of prosperity for America. But during the 30's, life went downhill and everyone felt that they couldn't escape their despair.

It can be inferred that gray represents the upcoming Great Depression that follows the Roaring 20's. The Valley of Ashes is decribed as gray, gray everywhere. It's a place you can imagine to not be all too pleasent, even the name is unpleasent.
