For this assesment task we had to create a recipe using only a 'locavore' menu, which means everything is locally grown/made/caught etc. for our recipe we chose to make fish and chips. The fish was flathead, freshly caught at Slopen Main, and cooked in a frying pan with garlic, butter and Tasmanian Bush Pepper. the chips were made from Tasmanian Grown dutch cream potatoes, cooked in olive oil, parmesan cheese and Tasmanian Bush Pepper. We chose to make fish and chips simply because it was simple, Tasmanian and there were many things we could do with it to make it Locavore and yummy!
The meal was great, great flavour on both the fish and the chips, even if there chips were a tad undercooked.
THE FISHTASTIC RECIPE! CHIPS: 4 dutch cream potatoes 2 tbs extra virgin olive oil 1 tbs salt 1 tbs bush pepper preheat oven to 200C. Slice wedges into desired size. Put oil in a bowl and put wedges in. cover the wedges in oil and sprinkle with most of the salt and pepper. Remove wedges, letting excess oil drip off, and place them skin side down on baking tray and sprinkle the rest of the salt and pepper. Bake in the oven for approx. 30mins, turning at 15. FISH: 6 flathead fillets cup of flat-leaf parsley, shredded/chopped 1 tbs salt 1 tbs bush pepper 1 tbs extra virgin olive oil 1 tbs butter 2 cloves garlic, minced 6 lemon wedges (1 lemon) Mince garlic, and mix with tbs extra virgin olive oil. Brush each fillet on both sides with garlic/olive oil mix, and sprinkle shredded parsley over each, along with salt and pepper to taste. Heat frying pan, melt half the butter in and cook 3 of the fillets on each side until brown. Repeat with other 3 fillets. Slice lemon into 6 wedges and serve.

A locavore is someone who eats food grown or produced locally. So a locavore menu is all locally grown or produced food!
