Cadbury's Caramello Chocolate Production... The long production process begins in Singapore at a cocoa factory, where the top quality beans are processed into cocoa mass. Fresh full cream milk is condensed and transported to the factories where sugar and some of the cocoa mass is added to create a rich chocolatey liquid. All of this is evaporated to make milk chocolate crumbs. Upon arrival at the chocolate factory, the crumbs are passed through a pin mill, after which cocoa liquor, cocoa butter, and flavoring is added. The amount of emulsifiers added depends on how thick/hard the end product needs to be.

All chocolate apart from white chocolate goes through the same process..... REFINING: Putting the finishing touches to the yummy chocolate! CONCHING: Mixing and beating the semi-liquid chocolate to get rid of bad flavors and develop the flavor. TEMPERING: Mixing and cooling the liquid carefully so that the fats crystallize in their most stable form. A special machine has been developed to make sure that the process is completed to standards.
