5. Serve each enchilada with a spoonful of cold sour cream or plain yogurt and garnish with shredded cheese.
4. When all the tortillas have been placed in the pan, cover them with remaining sauce. Cook in a 350 degreee F. oven until sauce is bubbly (about 15 to 20 minutes).
3. Place the tortilla on a cutting board and put 1/4 of a cup of filling in the center and sprinkle with cheese (about 1/4 of a cup). Roll up in put in a baking pan with the opening face down. Repeat steps one through 3 with remaining tortillas.
2. Remove tortilla with tongs and dip in heated enchilada sauce until tortilla is well coated.
1. Place a tortilla in a dry skillet and heat both sides until it softens (or you can heat it in the microwave for 15 seconds)

10 ounces of Montery Jack cheese, grated (2 and 1/2 cups when grated)
2 cups of filling
heated enchilada sauce
7 to 8 inch corn tortillas
