Roast Chicken
1 4lb roasting chicken 6 cloves Garlic 1 tsp salt I oragnge (sliced) 2 Onions (halved) 2 Tbsp Butter Using you hand slide orange slices and butter under the skin over the breast Using a knife poke several slits evenly into the meat and insert garlic clove into the slits Cut Onion in half and place in cavity with remaining orange slices (not for eating - just for adding flavour) Rub outside with salt and pepper and cook at 385 for 1.5 hours
